Egg Curry | Egg Recipes
Welcome to cook with Sonali. Today I am going to make Egg Curry. It is plain and simple recipe to make at your home. It’s perfect for lunch or dinner with hot steamed rice.
So let’s have a look at the ingredients
• 6 pc hard boil eggs
• Ginger garlic paste
• Onion paste
• Tomato purée ( boil the tomato then grind it)
• 1 tbsp of cumin powder
• 1 tbsp of coriander powder
• 1 tbsp of turmeric powder
• 1 tbsp of garam masala powder
• 1 tbsp of kasuri methi
• Chopped coriander leaves
• ½ tbsp of sugar ( optional)
• Salt to taste
• 1 tbsp of butter
• Oil as needed
• Cinnamon, cloves, cardamom
• Bay leaves
That’s all you need for the egg curry. So, lets get started with the dish.
At first spread some salt, turmeric, red chili powder into the eggs, and massage it thoroughly with your hand. Meanwhile heat oil in kadai once the oil is hot then add egg and stir fry over medium flame until the eggs turns light golden brown. Now I will take it out and keep it aside.
Again heat oil in kadai then add red chili, bay leaves, cinnamon, cloves, cardamom, then add onion paste, ginger, garlic tomato paste and all spices like coriander powder, cumin powder, red chili powder turmeric and little bit salt. Stir fry over medium flame for about 3-4 minutes until the oils start coming out on the surface. Once the oil comes up then I will add egg into it and cook for about 2-3 minutes. Now I will add 1 cup of water slowly slowly so that the Colors of the dish remain intact. Mix it well, then add garam masala. Cover with lid and cook for about 8-10 minutes.
Now I will take another kadai add butter. once the butter is melted then add kasuri methi and chopped coriander leaves. Stir it well and cook for few minutes. Now it’s done I will keep it aside.
After 10 minutes open the lid and pour the butter mixture on the top of the egg. Mix it well. Egg curry is ready.
