Welcome to Cook with Sonali. Today I am going to make Rasgulla. Rasgulla popularity known as rosogolla in local language. It’s originated from Odisha. Rasgulla is popular in Odisha, West Bengal, and many other places as a syrup dessert.
So let’s quickly go through the ingredients
- 1 litter of full cream milk
- 2 tbsps of lemon juice
- 1 and ½ cup of sugar
- 2-3 green cardamom pods
- 1/2 tbsp of baking soda
- 1 tbsp of all purpose flour
That’s all you need for the rasgulla recipe. So let’s get started with the dish.
Boil milk in a bowl over medium flame. Once the milk starts boiling then add lemon juice and stir it nicely. You will notice the solid milky protein and liquid whey protein will start to separate. Now turn off gas flame.
Spread a muslin cloth to drain the whey proteins. Now wash the full thing in normal water to remove the raw smells of lemon. Then squeeze the excess water gently.
Now I will take a plate to add chana. We need to knead for about 8-10 minutes and make a soft smooth dough. Now add little bit of all purpose flour and little bit of baking powder. Mix them well. When fat will start releasing then make small round balls.
Meanwhile I will take a pressure cooker, add 2 cups of water and boil it. Once the water starts boiling then add 1 cup of sugar. After the sugar gets dissolved completely then add balls one by one.
Now cover the pressure cooker and cook until you get one whistle. After a whistle put off the flame and keep it for another 10 minutes.
Now you can see rasgulla is so puffed up. The size would increase to double.
If you see sugar syrup is too thin add more sugar and boil again at low flame until you get the desire thickness of the syrup.
You will need to wait for about 5-6 hours, then you will get soft spongy juicy rasgulla.
Believe me this is my very first attempt with rasgulla and I think I have done justice to it.
